Research lines

In recent years I have been involved in the application of traditional and new technologies to guarantee food safety and to optimize the organoleptic characteristics of animal foods, mainly fishery products, poultry products (for example, chicken meat and eggs), although I also have some experiences in dairy products.

Projects

My philosophy of teaching is based on three goals or principles: (1) improving scientific education; (2) promote the development of the critical thinking skills of the student; (3) and promote a successful development of the student as a professional and as a person.

Today, my approach to teaching is the preparation of food and the quality of fish and egg products in various subjects of different undergraduate programs (for example, veterinarians, food science and biology). In addition, I participate in several MS programs and I am a guest speaker for other courses on request. I am interested in establishing collaborations in the area of ​​community strengthening.
