Al tratarse de un m\u00e9todo no t\u00e9rmico, no se produce el deterioro de la calidad nutricional, funcional u organol\u00e9ptica, t\u00edpico de la evaporaci\u00f3n mediante tratamiento t\u00e9rmico. Al compararlo con m\u00e9todos de deshidrataci\u00f3n que garantizan la ausencia de da\u00f1o t\u00e9rmico, como por ejemplo la liofilizaci\u00f3n, se prev\u00e9 que el tratamiento propuesto permita ahorro energ\u00e9tico.
