Entre las regiones espectrales UV, el UV-C (200\u2013280 nm) es una tecnolog\u00eda emergente para la eliminaci\u00f3n de microorganismos alterantes y pat\u00f3genos al da\u00f1ar su material gen\u00e9tico o ADN. Adem\u00e1s, la radiaci\u00f3n UV-C est\u00e1 aprobada por la FDA para la descontaminaci\u00f3n de superficies de productos alimenticios (FDA, 2011) y tambi\u00e9n para zumos y productos l\u00e1cteos por la FDA, la Health Canada y por la EFSA europea. Los par\u00e1metros del proceso como la intensidad, la dosis, el tiempo de exposici\u00f3n, el reactor\/cabina UV-C utilizada, las caracter\u00edsticas de los microorganismos y las propiedades de los alimentos son los factores efectivos en el proceso UV-C. Mediante el uso de esta tecnolog\u00eda, se puede aumentar la vida \u00fatil de los productos alimenticios debido a la eliminaci\u00f3n de microorganismos pat\u00f3genos y a la reducci\u00f3n de la carga microbiana inicial, ofreciendo seguridad alimentaria.<\/p>\n<p>El objetivo principal del proyecto UV C <em>Demo<\/em> ha sido la transferencia de conocimientos t\u00e9cnicos de la tecnolog\u00eda UV-C al sector agroalimentario catal\u00e1n, para la obtenci\u00f3n de alimentos l\u00edquidos seguros desde el punto de vista microbiol\u00f3gico, y con sus caracter\u00edsticas organol\u00e9pticas perfectamente conservadas.
