Estos estudios se pueden realizar como \u201cchallenge test\u201d, mediante la inoculaci\u00f3n en condiciones de contenci\u00f3n biol\u00f3gica (en laboratorio de bioseguridad) de <em>Listeria monocytogenes<\/em> u otros microorganismos pat\u00f3genos como <em>Clostridium botulinum,<\/em> de importancia en productos como la miel y productos c\u00e1rnicos con reducci\u00f3n del contenido de nitratos\/nitritos, as\u00ed como con cualquier microorganismo alterante. \u00a0Ello permite validar el proceso tecnol\u00f3gico determinando su capacidad de recuperaci\u00f3n y desarrollo o durante la vida comercial de los alimentos.
