Este m\u00e9todo se basa en las observaciones de los fl\u00f3culos iniciales de case\u00edna en la pared de vidrio de un tubo de ensayo, por lo que su reproductibilidad y repetibilidad dependen enormemente del operador.<\/p>\n<p><a href=\"https:\/\/www-sciencedirect-com.are.uab.cat\/science\/article\/pii\/S0260877411004791?via%3Dihub\">Nuestros sistemas \u00f3pticos<\/a> para controlar la coagulaci\u00f3n de la leche proporcionan un m\u00e9todo consistente y repetible para estimar la cin\u00e9tica de las enzimas de coagulaci\u00f3n en la leche. Nuestro m\u00e9todo ofrece una alternativa adecuada, precisa y sencilla para la determinaci\u00f3n de la actividad coagulante.<\/p>\n<p>El seguimiento simult\u00e1neo de cambios de temperatura, pH y respuesta \u00f3ptica, nos permiten evaluar nuevos cuajos y enzimas proteol\u00edticas, cultivos l\u00e1cteos y aditivos para hacer queso y yogur.
