Diferentes tecnolog\u00edas de sensores \u00f3pticos en l\u00ednea que utilizan dispersi\u00f3n de luz UV\/VIS\/NIR y fluorescencia (configuraciones de \u00e1ngulo recto y front-face) est\u00e1n actualmente en desarrollo:<\/p>\n<ol>\n<li>Determinaci\u00f3n de la firmeza del gel en geles l\u00e1cteos inducidos por cuajo o por cultivos l\u00e1cticos,<\/li>\n<li>Determinaci\u00f3n del pH en yogur y productos l\u00e1cteos fermentados,<\/li>\n<li>Control combinado de la coagulaci\u00f3n de la leche y la sin\u00e9resis (desuerado) de la cuajada en la fabricaci\u00f3n del queso,<\/li>\n<li>Determinaci\u00f3n del grado de desnaturalizaci\u00f3n de la prote\u00edna del suero durante el tratamiento t\u00e9rmico de la leche,<\/li>\n<li>Determinaci\u00f3n del tama\u00f1o micelar en leches tratadas t\u00e9rmicamente,<\/li>\n<li>Determinaci\u00f3n de diversos marcadores de da\u00f1o t\u00e9rmico (HMF, -SH, lactulosa, furosina, vitaminas A, C y B<sub>2<\/sub>, etc., en leche,<\/li>\n<li>Determinaci\u00f3n de propiedades funcionales del suero de queser\u00eda (ej., capacidades espumantes, emulsionante, gelificantes, etc.)<\/li>\n<li>Determinaci\u00f3n del grado de emulsificaci\u00f3n de la carne durante el corte y de las mermas de producto.<\/li>\n<\/ol>\n[\/vc_column_text][\/vc_column_inner][vc_column_inner column_padding=&#8221;padding-3-percent&#8221;
