853\/2005 y 2073\/2005), y que son necesarios tambi\u00e9n para la implantaci\u00f3n de est\u00e1ndares de certificaci\u00f3n de la inocuidad de los productos elaborados, como BRC, IFS e ISO 22000. Estos estudios se pueden realizar como \u201cchallenge test\u201d, mediante la inoculaci\u00f3n en condiciones de contenci\u00f3n biol\u00f3gica (en laboratorio de bioseguridad) de <em>Listeria monocytogenes<\/em> u otros microorganismos pat\u00f3genos como <em>Clostridium botulinum<\/em> de importancia en productos como la miel y productos c\u00e1rnicos con reducci\u00f3n del contenido de nitratos\/nitritos, as\u00ed como con cualquier microorganismo alterante.\u00a0Ello permite validar el proceso tecnol\u00f3gico, como tratamientos t\u00e9rmicos a baja temperatura, UHPH, UVc y per\u00f3xido de hidr\u00f3geno atomizando, determinando su capacidad de recuperaci\u00f3n y desarrollo o durante la vida comercial de los alimentos.
