El m\u00e8tode ofereix una alternativa adequada, precisa i senzilla per a la determinaci\u00f3 de l\u2019activitat de coagulaci\u00f3.<\/p>\n<p>El seguiment simultani de canvis de temperatura, pH i resposta \u00f2ptica, permeten avaluar nous qualls, cultius l\u00e0ctics i additius per fer formatge, \u00a0iogurt i llets fermentades.
